Last week's dishes employed red lentils as a nice shift from other carbohydrate meal portions that I've been making as of late.
Lentils, Grilled Chicken seasoned with mint and lemon. Grilled zucchini, mushrooms and onions added to the overall texture of the meal:
The butter shrimp worked well, however the garnish lacked consistency. I'm still trying to sort out how I can use Avocado as a garnish since I seem to mess up the cuts every time.
This evening I managed to fire up my cast-iron skillet to start-off my rice week with a fillet of salmon seasoned with tarragon, butter and lemon. I've also been collecting recipes as of late. If you have any suggestions, please point me in the right direction!
