More Cooking: Fennel Salad

While I have been cooking, I've unfortunately had all my photo equipment on tour and so photos are not an option. Regardless, I'm still happy to post recipes from friends.

Irise Archambault sent me this recipe:

Fennel Salad

Comme promis voici la recette de salade de fenouil:
1 fenel root
1 mango not too ripe
1/4 onion red or white

Cut the fenel root in two and cut again in fine slices
cut the mango in small chunks
cut onion in thin slices

Dressing: you can use your favorite dressing or use mine:

Juice of 1 lemon or lime
1/4 cup olive oil
salt to taste
1 tea spoon of brown sugar or honey or maple syrup
1 tea spoon of your choice of vinegar

Mix everything and sprinkle dry fenel on top
